Note: Very fresh eggs are delicious fried or scrambled, but older eggs are actually easier to peel. Your best bet for hard-boiled eggs that are easy to peel is to choose eggs you've had in the refrigerator for a week or two.

How to Boil Eggs on the Stovetop

There are two egg-related questions that come up all the time:

  1. What came first, the chicken or the egg?
  2. Do you start with boiling water or do you start with cold water when you boil eggs?

We recommend a 4-step method that starts with cold water. Why? Because this prevents overcooking the eggs. You'll never have to deal with dry, chalky, overcooked eggs with weirdly greenish yolks again. Nothing but beautiful bright yellow yolks and amazing texture for you! So good, you'll want to eat them with just a sprinkle of salt.

Three Steps to Perfect Hard Boiled or Soft Boiled Eggs:

1. Place eggs in a saucepan or pot and cover with cold water.

Eggs first, then water. Why? Because if you put the eggs in afterward, they might crack as they fall to the bottom of the pan. It's no fun to learn this the hard way.

2. Put pan over high heat and bring water to a rolling boil. Remove pan from heat and cover.

Why do old eggs peel better? From PopSugar: In fresh eggs, the albumen (egg white) tends to stick to the inner shell membrane due to the less acidic environment of the egg. After the shell’s protective coat slowly wears off, the egg becomes porous, absorbs more air, and releases some of its carbon dioxide.

FIVE. There are many wives tales for centered yolks. Some tricks that I have heard are to sit the egg carton on its side the night before boiling and stirring the eggs while the water comes to a boil, alternating the direction every minute.

I have also never had success with any of these working. I like to live on the edge and take my chances.

SIX. Remove from heat as soon as the water comes to a boil, cover and let sit for 10-12 minutes. Many people are worried they will undercook eggs and therefore over boil.

Bringing them to a full rolling boil is a sure way to get gray yolks! You are even better with a low simmer than a full boil. 

Overcooking will result in the yucky colored gray hued yolk. The color comes from iron in the yolk reacting with hydrogen sulfide in the white.

Please note that the 10-12 minutes is for a large egg. Extra large or jumbo eggs may need to boil for 1-2 minutes before removing from heat and conversely, smaller eggs may need closer to 8-10 minutes. 

How to Get Yellow Yolks

SEVEN. Immediately immerse in a bowl of ice water to stop the cooking process and also loosen the shells. Shock the eggs!

Fill a large mixing bowl with cold water and ice cubes, but make sure to leave enough space for the eggs. Transfer from boiling water to ice bath using a large slotted spoon. 

EIGHT. Shells will be the easiest to remove while they are still warm. Peeling under cold running water will also assist in separating the shell from the egg and prevent you from burning yourself.

Heavy Bottom Sauce Pan– this will be one of your most used kitchen tools. Having something that is heavy bottom will distribute heat better and prevent burning whether you are using an electric or gas range.

Dutch Oven– every kitchen should have one! They are heavy. They are expensive. They are worth it!

Slotted Metal Spatula– I like these best for frying because they can withstand very high temperatures, the fine mesh means I can fish out any remaining batter that might be burning and they don’t stick to things easily.

Whether you want soft or hard boiled eggs, you can easily and quickly make them in the microwave.  If you have limited space like a microfridge, you can buy a 6 pack of eggs and boil them all together.  Then, it’s just a matter of pulling 1 or 2 out for a meal.

Personally, I like my eggs sliced opened, medium boiled with a sprinkle of salt.   But, my college age daughter loves tuna salad and egg salad sandwiches.  These are both easy to whip up in your room with ready made boiled eggs.  Plus, with 4-6 boiled eggs, you can make enough to last a few days.

Can you Boil Eggs in the Microwave?

I’ve seen lots of advice on boiling eggs in the microwave from not doing it at all to poking a hole in the bottom of each egg with a thumbtack before boiling to prevent eggs exploding.  I have never poked a hole in the bottom of the eggs, but I use salt in the water.  I haven’t had an egg explosion yet.

It’s very important you either add the salt OR you poke holes.  Otherwise, there is a very real chance your eggs could explode.  Wet egg and shell splattered all over the microwave does not sound fun at all to clean up.

I love medium boiled eggs.

I tend to like medium boiled eggs where the yolk is not completely firm but also not runny.  They are perfect for breakfast. It’s almost like eating fried eggs. I love them sliced up and put on top of a couple slices of sourdough toast.

However, if you want to make some tuna salad or egg salad or chop a boiled egg in just a regular green salad, I recommend boiling your eggs until they are hard boiled with firm yolks.

How to Boil Eggs in the Microwave

You’ll want to use a microwave safe bowl and place the eggs in the bottom.  Then, fill with hot water (if you how long do you boil 12 eggs for hard boiled find hot water) about 1/2 inch over the eggs.

Next, add a 1/2 teaspoon of salt per egg, so if you have 6 eggs, that would be 3 teaspoons of salt. DO NOT FORGET THIS STEP! This helps prevent egg explosions.

    2. Cover the eggs with water at least 1/2 inch above the eggs.
    3. Add a 1/2 teaspoon of salt for each egg such as 1 teaspoon for 2 eggs and 3 teaspoons for 6 eggs.
